Hampton Bays restaurant and bar to get face-lift

The new owners of a Hampton Bays restaurant and bar want to give the establishment a new look to match its high-end cuisine.JT’s Place on Montauk Highway will be transformed into Squiretown Restaurant and Bar under a proposed exterior renovation plan being considered by the Southampton Town Planning Board. Plans for the renovations were heard by the board on Thursday, September 17.

The new owners of the restaurant, brothers Craig and Charles Bishop, hope to outfit the building with a new stucco front, a gabled roof and new siding. The brothers were expected to sign an 11-year lease on the restaurant this week.

Charles Bishop said the building exterior is “basically rotten” and in need of repair. He hoped to reopen the restaurant by Thanksgiving, the earliest that renovations could be completed.

“I want to have a bar that a fine, upstanding member of the community can walk in and out of,” he said.

The restaurant will continue serving lunch and dinner and feature dishes in the style of a new American bistro, Craig Bishop said.

But the restaurant will make an effort to improve its offerings. “We’re going up a notch or two with the food quality,” he said.

Planning Board members were pleased with the proposed plans. Chairman Dennis Finnerty said the project earned a “tentative thumbs-up” and added that there is “definitely going to be an approval” of the plans.

He noted that before acting on the application, the board will wait to hear recommendations from the Architectural Review Board regarding materials used for the building’s siding, but Mr. Finnerty said he expects “no serious objections” to be raised by the review board.

“I think the [Planning Board] was certainly supportive of efforts to upgrade the site,” he said. “I think the site was certainly in need of an upgrade.”

I think any upgrade done anywhere in Hampton bays is a briliant idea!!
Most of the structures along Main st would do well following suit.
We can only go up from here.

Wonderful news, Charlie. I heard that this was going to happen to Main Street in Hampton Bays and I am definately behind it. Can't wait to have my first meal there.

the renovation plans are clean and classy, and Squiretown is a perfect name,, and knowing Charlie, I am sure the food is going to be fabulous. I claim the end seat at the bar!!
